The research program in my lab is focused primarily on understanding the postharvest metabolism of phytonutrients in commercial fruits and vegetables. Current research suggests that the consumption of a diet high in phytonutrients contributes towards the maintenance of human health and well-being. Therefore, it is important to determine how our current postharvest strategies for maintaining a marketable product, from harvest through to kitchen, alter the de novo biosynthesis or oxidation of these beneficial compounds prior to consumption by the consumer.

My research program also evaluates various postharvest technologies for potential adoption by the fruit and vegetable growers of Georgia, and assists in the implementation of the technologies that increase the commercial value of the crop.
